Cajun Roast Chicken has been a favorite of my family.
It is tender and juicy ..... and will be a wonderful weekend dinner when accompanied with mashed potatoes and salad.

Well, I'm happy to share this recipe ~ from my cooking class & it is very simple...

Jom make Cajun Roast Chicken .....

Perfect for dinner :)

Opps... Turkey!!


1 nos Whole chicken 
1 tbsp Salt
1 tbsp Black Papper
1 tbsp Thyme
1 tbsp Caraway Seed
1 1/2 Hot Paprika
1 tbsp Mustard
1 tbsp Rosemary
1 nos Bay Leaves
1 tbsp Oregano
1 tbsp Lea & Perrins
2 Tbsp Oil
2 nos  lime  juice
1 nos onion wedges


  1. Clean chicken and pat dry.
  2. Mix all the ingredients in a bowl, except onions.
  3. Generously rub the body and cavity with the merinade.
  4. Leave to merinade overnight.
  5. Place chicken with onion wedges on baking pan and bake for 1/2 an hour. (wrap with aluminium foil 1/2 an hour & unwrap for browning and bake for 1/2 an hour).

Well done !!



Remove chicken from roasting pan, add half cup of water and bring to a boil. Set aside, when cool down remove fat and add one tsp chicken stock,  1 tbsp  papper, 1 tsp flour, 1 tbsp butter , & whisk the paste, into simmering mixture, add a few drops of lemon juice, salt and papper to taste. Cook till thickens into a gravy or smooth paste.
