MUFFIN and MUFFIN and MUFFIN

My daughter loves muffins...  Muaz loves muffins..
Everyone love muffins.
Simple to make, homey and delicious.
They were suppose to be like...... ROUND, FLAT, YEASTY and CRAGGY on the inside.

In my own home, I' ve found that a basket of fragrant muffins always pleases both family and friends, and that the cook gets far more credit than the effort might  seem to deserve...

Muffin are so versatile & we can enjoy at any time of day and ideal  any time; Breakfast, tea time, brunch or lunch, or even dinner.

                                    You don't get tired of muffins...



The muffins take about 20 minutes to cook and we have to adjust the heat so they bake slowly without scorching; after that we dont have to hover over them.

1 teaspoon granulated sugar
1 cup warm water
1 tablespoon active dried yeast
2 cups buttermilk
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda,
                                                     
 melted unsalted butter for  muffin rings                                                                                  

1. Put sugar and 1/4 cup of water in mixer bowl; sprinkle with yeast.
2. Mix for few seconds. Let stand a few minutes until yeast is foamy.
3. Heat buttermilk until it is barely warm to touch; it will probably curdle but do not worry. When warm, remove from heat.
4. Measure flour; sprinkle over yeast. Add salt. Pour buttermilk over  flour. Mix on ;low speed just to combine.
5. Then beat  3 minutes on medim speed. Batter will be sticky and elastic.
6. Remove bowl from machine; cover with plastic wrab and let rise one hour in warm place until bubbly and double in volume.
7. Dissolve baking soda in remaining 3/4 cup warm water. add to battter. Mix, then beat 1 minute. Cover bowl and let rise 30 minute longer.
8. Heat the oven to about 180'C. 
9. Scoop 1/4 batter into muffin rings and cook 15 to 20 minutes.
